Soooooo, here we are. Once CA issued a Stay-At-Home order, I knew we (in Illinois) would be getting ours, too. And so we did, so we did.
I seem to have time on my hands, but not much desire to clean or do yard work.
Well, there’s tv. But that’s pretty depressing these days.
And I can only do so much reading (books or internet) I can do before my butt or back gets sore. Unless I’m reading in the tub, but after about an hour of that, I’m pretty wrinkly.
So, besides losing my mind, what to do, what to do?
BAKE!!
I’ve been on a cooking/baking bender lately. Last week I made homemade cinnamon rolls, Moroccan Chicken and stuffed cabbage rolls.
This morning I pulled out the recipe for buttermilk biscuits:
3 cups all purpose flour
2 Tbs sugar
4 tsp baking powder
1 tsp salt
1 tsp baking soda
¾ cup unsalted butter (very cold)
1 cup buttermilk
Whisk flour, sugar, baking powder, salt and baking soda in a large bowl to blend. Grate cold butter into bowl (makes it easier to incorporate into dry ingredients). Use fingertips to rub butter into dry ingredients until mixture resembles coarse meal. Add buttermilk and stir until evenly moistened. Dump out dough onto a floured surface, pat into a ball, and fold over several times (makes for flaky biscuits). Handle gently. Pat out dough to about 1 inch thick. Cut biscuits straight down with biscuit cutter or a glass, twisting cutter at the end for less layered sides. Place on baking sheet (I use parchment paper). Bake at 425 deg for about 15 min until golden brown on top.
This very easy recipe makes 12-14 biscuits. Hmmm, maybe I should make 2 batches and stick some in the freezer.
Anyway, I made these this morning and ate two right out of the oven with honey for breakfast with a banana and coffee . So wonderful!
I could always use more kitchen-tested recipes since I’m sure I (and many of you) be doing a lot more home cooking in the weeks to come. Fairly easy ones, especially recipes to be enjoyed with the biscuits.
